How to make Lauki ki sabji in One Whistle of the Cooker? Laukisabji is an integral part of our Gujrati Cuisine. Gourd is a versatile vegetable and can be used as main dish, side dish or even as soup. The green tender gourd goes well with every sabzi, so it can be added while making any sabzi or curry and it won’t hurt its taste. Gourd dal sabzi is a delicious lauki ki sabji which takes almost 35 minutes for preparation.
A note on cooking
Everyone is aware that cooking takes a lot of time. It does not matter if you are doing it or your mom has been cooking for many years, every day is different. So how do we put an end to such problems? The answer: Cooking with your cooker or else known as pressure cooker. Before you try and understand how it works, let us first know what a pressure cooker is. Pressure cookers are pot like utensils that can cook food quickly using steam at high temperature within less time. There are two types of pressure cookers: one that uses electricity and one that uses gas. But today I am going to tell you about electric pressure cooker only because it is easier to use than gas. Electric pressure cookers come in various sizes from 1 liter up to 6 liters. To use these electric pressure cookers just plug them into an outlet, fill them with water (or any other liquid) then turn on the switch located on top of these utensils after which they will start working automatically.
After adding oil, heat it for a minute, add chopped onion and garlic, cook until onion turns brown. Then put all dry masalas (except chili) and cook for 3-4 minutes until raw smell goes away. Now put sabzi masala and all other ingredients except gourd and water into cooker, now switch on. Once it starts whistling take gourd pieces (large sized) out of skin and add them into cooker along with water.
Take a pressure cooker and add about 2 tablespoons oil, 1/2 teaspoon cumin seeds, whole dried red chillies(3),2 onions finely chopped,1 tomato chopped,1 tbsp ginger garlic paste. Next add 100 gms moong dal and 100 gms spinach chopped into small pieces. Allow it to cook for about 2 whistles on medium flame. Keep stirring occasionally so that no spices stick to bottom of pressure cooker and they do not get burnt.
Lauki sabzi is delicious when served with rice, chapati or phulka. You can even serve it with puri and paratha for a complete meal. This sabzi is also good with roti or bread.
